LAS VEGAS (October 2014) – In its October 2014 issue, renowned wine magazine Wine Spectator spotlights Las Vegas’ own Mimmo Ferraro, executive chef, Ferraro’s Italian Restaurant & Wine Bar, in its popular back-page “A Perfect Match” feature. The article, titled “Veal Scaloppine and Truffles with Barbaresco,” includes the recipe for Ferraro’s popular Vitello Reale dish, which pairs tender veal medallions with sage, white wine fried egg and fresh truffles.
In the article, Chef Mimmo recommends serving the dish with a Barbaresco wine. He is quoted saying, “You can age it and age it—it’s still going to be very vibrant and rich in fruit, but it’s not going to overpower.”
For home cooks, the article reveals Chef Mimmo advises “using the best products available. ‘Use top-quality eggs,’ he urges, ‘and if you find fresh white truffles in season, use them!’”
In celebration of Chef Mimmo’s recognition in Wine Spectator, guests need not recreate the recipe at home. Ferraro’s is offering a four-course “A Perfect Match” Menu, priced at $350 for two people. The dinner begins with pappardelle with butter, sage and shaved, seasonal white truffles. Following the first course comes with an appetizer of burrata served with arugula and prosciutto. Next on the menu is Ferraro’s veal-and-truffle dish featured in Wine Spectator. A dessert sampler concludes the meal. The menu for two includes a bottle of Produttori del Barbaresco Barbaresco 2010, one of the wines recommended by Wine Spectator to accompany Chef Mimmo’s featured recipe.
