Nov. 9 – 18, Ferraro’s will be one of just three Las Vegas restaurants
taking part in Urbani Tartufi’s Third Annual White Truffle Festival.
The event is modeled after Italy’s world-famous Fiera Internazionale del Tartufo Bianco di Alba. Ferraro’s crafted the featured white-truffle-inspired menu to transport guests to Alba in the Piedmont region of Italy, known as the home of the best white truffles in the world. A four-course menu offered nightly during dinner service is priced at $250 per person, while wine pairings of Barbaresco and Barolo by Prunotto may be added for $75 more. Dishes served with this menu will include:
- Battuta al Coltello (Piedmont-style prime beef tartare, funghi sott’olio, whipped homemade ricotta cheese)
- Taglierini (30-yolk Tajarin pasta, Parmigiano cheese reduction)
- Vitello Reale (Macho farm veal scaloppini, Ca’ del Bosco and sage sauce, fried eggs)
- Nocciola (hazelnut cake, sabayon, chocolate)
Italian white truffles are widely regarded as the most exquisite of all truffles. Their season runs typically from late October to late December. Truffles grow in the wild, where they enjoy a symbiotic relationship with mature oak, beech and hazelnut trees, from which they draw carbohydrates while growing underground. For this reason, truffles cannot be cultivated. That fact, together with their unmistakably rich and umami-filled flavor, makes truffles a universally rare and sought-after ingredient.
